Ziggy is happy in his crate overnight and is now going in from 11pm until 7am with no accidents and no need for a night time potty visit. We're very lucky!
My question is- as long as he's had plenty of exercise / mental simulation and he's got a toy and a Kong to play with, what's the maximum time he could be in his crate for during the day? We don't normally put him in his crate during the day but we have to go to a meeting next week and can't take him with us. Will he be ok in his crate for 2 or 3 hours?

Thats awesome! We do last busies at 11pm but my lunatics all start waking at about 5h30 again! :p
Once our pups are happy in their crate we slowly build up to 2 hours maximum.

I had a sort of crate like situation in my spare bedroom (I'd sectioned it off with a puppy pen and a baby gate). In any case, one day I left the house for half an hour and my boy ripped/chewed up a huge chunk of carpet.

So I bought an actual crate with a bottom (48"). It sits in my dining/lounge room and he's fed in there and will also choose to go lay in there on and off during the day. So far the longest I've left him is about 2 hours, but I intend to build him up to 4. The reality is, I live by myself and there are times I want/need to be away more than a couple of hours.

Again, so far, he seems fine with it. He's not anxious or upset when I return and will casually stroll around the house when I let him out (rather than going crazy jumping or running with excitement).
