Doggy Helper Cake

    15oz can crushed pineapple
    1 teaspoon bicarbonate of soda
    1 teaspoon mixed spice
    1 lb mixed dried fruit
    4oz butter
    4pz sugar

    Place all ingredients in a saucepan and bring to the boil. Turn off and allow to cool.

    Stir in

    8 oz self raising flour
    2 beaten eggs

    Place in cake tin (I use an 8 inch tin). Bake 1 hour to 1 hour 15 minutes @ 200C/400F/ gas Mark 6. It is that simple.

    Pineapple crush is quite difficult to source nowadays, I used a tin of value pineapple as it tends to have smaller pieces.
    It is very adaptable. You can vary the dried fruit, I substituted glacé cherries and chopped dried apricots for some of the conventional dried fruit.
    My daughter is a Vegan so I used egg substitute.

    An every day cut and come again cake. Good with a cuppa. It makes a very moist cake.

    Do your drain the crushed pineapple? Looks a super recipe, thanks.

    I drain the chopped pineapple and add some of the juice back, but if I can get crushed pineapple I just put the whole 15 pz tin in. It is very much a 'do it by feel' recipe as the amount of liquid in the pineapple varies tremendously.

    Thanks Molly. I don't think I have ever seen crushed pineapple, so would buy tinned and crush it!
