I have a 11 month old Labrador puppy who is definitely an extrovert. With COVID 19, I have been working from home since March and her behavior has improved and she is very happy. I am concerned that she will freak out when I go back to work. I do have a Maine Coon cat whom she gets along with but the cat sleeps most the day. I am debating whether to get another dog to keep her company. That would be the only reason for me to get a second dog. I hike alot and I think hiking with two dogs would be hard for me to handle. I would appreciate any advice with people with two dogs. Thanks

Personally I think that would be a bad idea at 11 months. Mine is now 2(3 in November) and beginning to calm down. I have seen two labs(male siblings)cause horrendous damage when home alone.
You may be better paying a dog walker to come in halfway through your time away and give him a good walk so he sleeps rather than needs entertaining.
