Salmon Recipe Swap

    We are not generally speaking a family of fish lovers.
    Partly as the kids (kids ::) ) detest anything with bones, even an accidental one.
    I came across this recipe for salmon burgers/cakes on the BBC Good Food website and it is a firm favorite (adapted for oven)

    For 4 people....
    Recipe Here
    4 salmon fillets skin and bones removed)
    2 tbsp Thai Red Curry Paste
    Chunk of fresh grated ginger ("thumb-sized")
    1 tsp Soy Sauce
    Small bunch of coriander (cilantro) chopped

    Chuck everything in a food processor and pulse until all coarsely chopped. Form into 8 patties.
    Place on a baking tray and bake approx 15-20mins at around 180 oC (fan oven)
    I usually serve with home made potato wedges for my carb-hungry family and a mixed salad or coleslaw but the salad in the recipe is rather tasty too. Oh, and usually some sweet chilli dipping sauce features too.

    So.......
    Who can tell me how to do crispy Salmon skins or something similar for Lilly? Waste not Want Not.

    Ooh sounds lovely, I am going to try it thanks Jac x :)

    I just lay the Salmon skins on a baking tray and pop in the Aga until crispy but keeping a very close eye on them as on occasions they have been cremated ::) I just break them up into bits and they LOVE them :)

    Thanks Helen.
    I usually give one or two raw to Lilly at the time, but don't want to overdo it!
    Will give that a try next time.

    We often find salmon going cheap at the supermarket and take full advantage of their whoopses!

    We eat a lot of salmon, but I never get as far as the crispy salmon skins, since our small canine hoover loves anything to do with salmon and just wolfs down the skin in any form that we give it to her, cooked or raw!

    We buy it going cheap too, crisping up the skins will keep for a few days in a plastic bag and are great for training treats, they still smell too x
