Can anyone recommend a suitable dog collar for my large Lab Norman.. tried the choker chain types to try to reduce him pulling towards other dogs when out walking but they seem a bit brutal!

It sounds as though you may need to teach Norman to walk to heel. Once you have this 100%, you can start adding distractions. You can use his food quota as treats for the training.
Choke chains don't work to reduce pulling. Harnesses with a front clip (eg perfect fit) do in my experience. Mine now walks very well on a limited slip lead https://www.tuffstuff-ltd.co.uk/limited-slip-lead but I do still get the harness out if there are a lot of temptations and use a cheap LED collar from eBay for off lead walks at night.
