Re: Ducklings The best things are custards and things like creme brûlée. Duck eggs make the best creme brûlée or creme caramel in the world, just with milk and sugar, no cream needed. Scrambled they are pretty good too. Got some duck egg recipes planned for the weekend

Re: Ducklings Not noticeably different in flavour to a home grown chicken egg. But more fat in the yolk, bigger yolk and less water in the white, so a creamier effect when scrambled. Plus the white is clearer/whiter while in a chicken egg it's yellowish. People who have only had a supermarket chicken egg would find a duck egg much 'eggier' in flavour but only because they've never had a truly fresh, home produced chicken egg (the freshness is a big factor in egg flavour). In Spring we'd get two to three dozen duck eggs a week - most of mine go to a chef friend.

Re: Ducklings I'm pleased and proud to announce that Temeraire has finally laid an egg in the nest. First, her mother Tassie started laying in the nest. Temeraire was still fairly sure that the pond was better. Then, yesterday, she made herself a little nest next to the proper nest (proper according to a human that is) and buried her egg in it in the sawdust. And today, they've both laid in the proper nest! Hooray! That is what I want, because it means I get clean eggs (essential for both eating and hatching). Here's this morning's effort - Temeraire's on the scale and her mother Tassie's beside (which is 80g).
Re: Ducklings He often gets eggs, but he never gets any ducks. We don't eat our ducks. And Obi doesn't chase or bother them. But he does love eating duck food whoever he can sneak in to a pen to get it...

When laying is in full swing he gets a couple a week (usually ones the ducks have carelessly laid while out foraging or deliberately laid in secret nests in the garden).
